German Pancakes

My husband introduced me into these when we were dating. They are so yummy and he likes to make them. When ever he is on breakfast (usually Sunday mornings) he makes these.

German Pancakes
6 eggs
1 c. milk
1 c. flour
1/2 tsp. salt
4 T. butter
Blend together in a blender or use beaters everything but butter. Melt butter in 9x13 pan in 450 oven until bubbly. Pour in batter. Bake for 15 minutes. It will puff up into all kinds of shapes. Serve immediately with syrup, honey, or jam. If using a glass pan, bake at 425.

Buttermilk Waffles

I love to read, and in the last few years I have read a great series of books by Josie S. Kilpack. I call them the Lemon Tart series because that is the first book. I really like these books. They are mystery books but have a bunch of recipes mixed in. In her last book, Rocky Road, there was a waffle recipe called Waffle Mania Waffles. Buttermilk Waffles

2 1/4 c. flour
4 tsp. baking powder
3/4 tsp. salt
1 1/2 T. sugar
2 eggs
1 1/4 c. milk
1 c. buttermilk
3/4 cup oil

Mix together dry ingredients; set aside. Combine remaining ingredients; mix well. Just before baking, add flour mixture to wet mixture, beating only until moistened. Cook in preheated waffle iron.

Monkey Bread

We have a similar recipe we have used for a couple of years, but in the last year we started making it this way so the kids can help.  We usually make it for breakfast so we have to do it on a day when we have plenty of time.  It usually takes close to one and a half hours for the kids to put it together and finish cooking.

3 oz package of vanilla pudding, cook and serve style
1 cup brown sugar
1 cup white sugar
2 tsp cinnamon
1 cup butter melted
4 small packages refrigerator biscuits

Mix the sugars, cinnamon, and half the package of pudding.  Cut the biscuits in half, dip in the butter, then in the sugar mixture.  Place in greased bundt pan.  After about 2/3 of the biscuits are in the pan, sprinkle the remaining pudding mix, two big spoonfuls of the sugar mixture, and 1/4 cup of butter over what is in the pan.  Top with the remaining biscuits.  Bake at 350 degrees for 35 to 45 minutes, or until done.
